Grilled Mango & Pineapple Salsa with Shrimp
  • 1 pineapple, cleaned and sliced
  • 3 mangoes, peeled
  • ½ lb small poached peeled shrimp
  • 1lb roma tomatoes, diced
  • 1 lemon
  • 2 tbsp Red Diablo
  • Cilantro
  • Thai Basil
  • Salt
Step 1.

Grill the mangoes and pineapple but do not cook all the way. Just enough to develop some flavour. 1 minute each side at high

Step 2.

While fruits are grilling, dice the tomatoes.

Step 3.

Remove the fruits from the grill and allow to cool for 1 minute

Step 4.

Mince cilantro and thai basil

Step 5.

Dice the fruits

Step 6.

In a large mixing bowl, place the diced fruits, tomatoes, shrimp, Red Diablo and herbs. Squeeze the lemon juice into the bowl.

Step 7.

Mix well, and serve with tortilla chips
