Preheat oven to 400°F
Cut duck breast into 1/8 inch slices.
Caramelize with duck fat in a pan, at medium heat for 30 minutes. Stir every 5 minutes. At the end, add the thyme.
Assemble flat bread by adding duck breasts, caramelized onions and roasted peppers.
Place in oven for 10-15 minutes or until crust is brown.
Remove from oven. Drizzle with Red Diablo, and garnish with fresh arugula.
Slice to serve.
