Charred Napa Cabbage and Leek Slaw
Ingredients:
- 1 napa cabbage, quartered 
- 2 leek stalks, sliced in half 
- 1 cup crushed roasted cashews 
- 1/2 cup crispy shallots 
- 1 tbsp sesame oil 
- 1 tbsp garlic powder 
- 1/2 cup Qewpie mayo 
- 1/2 cup canola oil 
- 2 tbsp Black Maple 
- 2 tbsp Red Diablo 
- 1 tbsp rice vinegar 
- Salt 
- 1/2 cup chives 
Instructions:
- Brush leeks and napa cabbage with canola oil. Season with salt and grill at medium heat for 5-10 minutes 
- While grilling, prepare the dressing. Mix the sesame oil, mayo, garlic powder, rice vinegar, Black Maple and Red Diablo 
- Once vegetables are finished grilling, liberally brush the dressing on the cabbage 
- Slice the leeks into long slivers 
- To assemble, place the cabbage on the bottom, the topped with the grilled leeks, crushed cashews, crispy shallots and chives
