Smoked Duck Breast Flat Bread
Ingredients:
Prep time 15 minutes | Cook time 15 minutes
- Store bought flat bread 
- 2 pc smoked duck breast 
- 1 onion, sliced 
- 1/4 lb roasted red peppers, sliced 
- 3 sprigs thyme, picked 
- 1/4 cup duck fat 
- Red Diablo, to taste 
- Arugula for garnish 
Instructions:
- Preheat the oven to 400F 
- Cut duck breast into 1/8” slices 
- Caramelize with duck fat in a pan, at medium heat for 30 minutes. Stir every 5 minutes. At the end, add the thyme 
- Assemble flat bread by adding duck breasts, caramelized onions and roasted peppers 
- Place in oven for 10-15 minutes or until crust is brown 
- Remove from oven. Drizzle with Red Diablo, and garnish with fresh arugula 
- Slice to serve
